2 tablespoons coconut flour
1 tablespoon unsweetened cocoa powder
1 tablespoon Monk Fruit sugar
1/4 teaspoon baking powder
Pinch of salt
1 large egg
2 tablespoons almond milk
1 tablespoon melted coconut oil
1/4 teaspoon vanilla extract
instructions
In a microwave-safe mug, whisk together coconut flour, cocoa powder, powdered monk fruit, baking powder, and salt.
Add egg, almond milk, melted coconut oil, and vanilla extract to the dry ingredients. Mix until well combined.
Microwave on high for 1-2 minutes, or until the cake is set.
Alternatively, you can bake it in the oven at 350°F (175°C) for 20 to 25 minutes until the cake sets.
Allow the cake to cool for a minute or two before enjoying it straight from the mugs or transferring it to a plate.
