Ingredients
2 ripe bananas, mashed
1 cup sourdough starter (unfed)
1/4 cup all-purpose flour
2 tablespoons coconut sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
Coconut oil, for frying
Powdered sugar & 1/4 teaspoon cinnamon, for dusting (optional)
Instructions
In a large mixing bowl, combine the mashed bananas, sourdough starter, flour, sugar, cinnamon, and salt. Mix until well combined.
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
Once the oil is hot, drop spoonfuls of the batter into the oil, making sure not to overcrowd the skillet.
Fry the fritters for 2-3 minutes on each side, or until golden brown and cooked through.
Remove the fritters from the oil and drain them on a paper towel-lined plate.
Dust the fritters with powdered sugar before serving, if desired. Enjoy warm!
