Ingredients
6 cups gluten-free Bread flour
3 tsp active yeast
1 tsp salt
2 Tbsp white sugar
3.5 cups lukewarm water
Instructions
Mix the flour, yeast, salt, and sugar in a large bowl.
Add the lukewarm water —start with 3 cups, adding up to half a cup extra until the mixture becomes a smooth dough. Mix for approximately 3 minutes.
Cover with plastic wrap and allow the mixture to rise at room temperature for about 2 hours.
Divide the mixture into two and shape it into oblong loaves. Place on a lined baking tray and smooth the top with wet fingers. Dust the top with rice flour and cover loosely with a tea towel. Rest for 30 minutes. Preheat oven to 450ºF/220ºC
Bake the loaves for 30 minutes or until crispy outside and gently browned.
Let the ciabatta cool down before slicing.
