Cutting out sugar can feel impossible, like you are giving up comfort and something you really enjoy. But here’s the truth I’ve learned through my own health healing journey: you don’t have to give up sweetness, you just have to find a new way to experience it.
That’s why I’m sharing one of my favorite comfort desserts:
Vegan Coconut Yogurt Chocolate Mousse.
This light and luscious mousse is a perfect treat for any occasion, whether a dinner party or a personal indulgence. Experience this delicious dessert's velvety smoothness and balanced taste that will impress your taste buds.
Things to note: to make this recipe non-vegan, substitute the coconut yogurt with Greek yogurt
Ingredients:
6 ounces (170g) dark chocolate, chopped 1 tablespoon coconut oil
1⁄2 cup (120g) almond butter
2 cups (460g) coconut yogurt
2 tablespoons maple syrup 1⁄2 teaspoon vanilla extract
Toppings:
1⁄4 can coconut cream, whipped
2 tablespoons chocolate, finely grated
Instructions:
1.In a heat-safe bowl, add the dark chocolate and coconut oil. Place the bowl over a saucepan of simmering water, but make sure the bottom of the bowl does not touch the water. Stir the chocolate until completely melted and smooth.
2.Mix coconut yogurt, nut butter, maple syrup, and vanilla extract in another bowl. Whisk everything until it is well combined.
3.Slowly pour the melted chocolate into the yogurt mixture, whisking continuously until fully incorporated and smooth.
4.Divide the mousse mixture between serving ramekins, cover with cling film, and refrigerate for 2 hours until set.
5.Once the mousse is set, remove it from the refrigerator. Garnish with a dollop of coconut cream, a sprinkle of nuts, and chocolate nibs.
6.Serve chilled.
